Summer Salad Recipe Favorites

Summertime is arguably the best time of the year – well at least I think so.  Days are longer, we can be outdoors more and what excites me the most is the abundance and variety of fruits and vegetables available to us. I just love visiting all the Farmers Markets in my area to try the latest ingredients in summertime recipes – especially healthy salad creations.

If you are going to indulge this summer, do it with low calorie, high volume foods that are good for you and make you feel full faster and longer like a cool and refreshing summer salad.  Making summer salads is one of my favorite things to do. I make one or two big batches at the beginning of the week and it lasts me several days. As the week goes on, the salad gets better because it continues to absorb all the flavor from the seasoning and ingredients mixed together.

I am sharing three of my favorites to make and eat. Each of them are simple and quick to “chef up,” which makes them perfect for summer parties too.

Italian Tomato Salad

 

 

 

 

 

 

 

3 Heirloom Tomatoes

1 Red Onion

1 Cucumber

1 Advocado

½ Cup Mozzarella cubed

1 TBSP Oil and Balsamic

Chop and combine all ingredients, and salt and pepper to taste.

 

Fiesta Corn Salad

 

 

 

 

 

 

1 Bag Frozen Corn

1 Can of Black Beans

1 Avocado

½ Cup Cilantro

1 Lime Squeezed

1 Tomato, Chopped

½ Red Onion, Chopped

Chop and combine all ingredients, and salt and pepper to taste.

 

Cucumber and Onion Salad

 

 

 

 

 

 

 

(This one is so simple, yet so delicious)

6 Mini Cucumbers

1 Yellow Onion

½ Cup Apple Cider Vinegar

½ Cup of Sugar

Chop cucumbers, peel skin and run a fork down each side of each cucumber to get the decorated edge look. Chop the onion, combine cucumbers, onion, vinegar and sugar in dish. Salt and pepper to taste, toss and refrigerate.
